Our Favorite Get Away

I am sure it is no surprise to anyone who reads this little scrapbook of mine that my favorite place to take the kiddos for an afternoon break is David and Kayla’s place.

Ahhh. Yes!

Kayla always has fun things planned for her siblings when we show up!

Yesterday afternoon we baked cookies that will be some love that will be delivered to a special someone.

The littles have a drawer at Kayla’s that they talk about the whole six minutes it takes us to drive down off the ridge into the valley where Kayla lives.

It has cards, coloring books, crayons and such – but these things are way better than the million of them we have at home, well, simply because they are Kayla’s!

We also went down the street a couple of blocks and played at the local library for awhile.

It is tiny, empty, and quiet – which is perfect for the littles. They love it.

They rotate the toys there, so there is always something new to play with!

A puppet show, anyone?!

We headed back to Kayla’s and made a huge pot of soup (surprise, surprise!) and a salad for dinner. We managed to save enough for the guys!

By the time we headed back up the hill it was time for quick baths and bed!

The perfect end to a great day!!

Moments in Time

I have so enjoyed being in the moments lately.

Trying to soak it ALL in – the blessing of these kiddos, a wonderful husband, a beautiful grand baby, this life, another day here on earth!

Call me sappy – but life lately just has me in awe!!

A week ago Friday we headed to Madison for an appointment for Tate.

Blake and I decided that team Tate would be all of us except for Grant who had to work (and could not fit in our van!).

It was a great decision! Tate and Eliza struggle when we drive away for these long appointments with just one of them. They know the special one-on-one time the one leaving is going to receive and it is hard for the other one to be left behind. When there are big appointments with sedation involved it is just too much to take another little one along. Tate’s appointment this day was just a quick bladder scan, and to talk to the doctor. Addie Mae kept the middle boys in the waiting room and we took the littles to the appointment! We had a good report! All is well with Tate!

After we got through at the hospital, we had plans to stay in the big city to do some shopping and to eat out. It was SO, so, so windy – but thankfully it was a little warmer, which made it not quite as bad. We had fun running around, eating out and managed to get everything on our list!

It has been a blessing to have such focus on school right now. The three oldest kiddos especially are very ambitious. At this time of the year every year they can see the end in sight and really push and work hard to finish out their year as soon as they can! We have two seniors this year that are more ambitious than ever!

With just a few steps into either the kitchen or the office I am having discussions about supply and demand economics, helping draw angles with a compass and a protractor, teaching beginners multiplication facts, or playing a competitive round of a phonics game. SO, SO FUN!!

I remembered over the weekend that I have this curriculum on hand, and as I looked through it to refresh my memory I realized the littles would LOVE it. They might not be able to do everything in it, but they will be able to do most of it. Good-bye lots of time planning, and hello following someone else’s plan!

On Wednesday of last week I took the littles on a field trip to the library. I had planned on taking Lane too, but he did not want to go! Addie went with me, which then warranted a stop at the Co-op for us girls to get a mid-morning snack!

Last Wednesday night we had a girls’ night at Kayla’s! Clyde was invited too. We had planned to watch a webinar, but it was not available as planned, so we listened to an essential oils class instead. Oh – and then there was Fixer Upper, Cupcake Wars, and brownies and ice cream!

I have enjoyed a lot of time on the floor lately – just playing. Playing with the kids! It has been awesome.

We have a little flu bug that traveled (and may still be traveling) through our home. Took me down first – but it was short lived and not too bad. SO thankful.

Today is March 1st. It was 55 degrees over the weekend, and our snow was all but gone. Until we woke up today to a giant snow storm! Hello March 1st!

BUT, once we were plowed out around 4 p.m. we had some celebrities arrive. And one of them made a great team mate with Chad packaging up all of the eggs. So March 1st was all good!

A Recipe//Thai Peanut Soup

Here is a favorite recipe I would like to share. Since it sounds like winter is on its way out every where but here, all you friends in warmer climates might not be wanting a big pot of soup right now! But I promise you should try it anyway!

Thai Peanut Soup

1 onion, finely diced
4-5 cloves of garlic, minced
2 TBSP fresh ginger, minced
3 stalks of celery (even the leaves), finely diced
3 carrots, sliced in rounds
2 cups green cabbage, chopped
2 heads of broccoli, broken or chopped into small florets (we use frozen broccoli)
2 sweet potatoes, peeled and chopped into bite size pieces
1 cup of water
4 cups chicken or vegetable stock (we use homemade)
1 can full-fat coconut milk
1/2 cup all natural peanut butter
4 TBSP soy sauce (we use coconut aminos)
salt and pepper to taste

Prepare all of the veggies and place in a soup pot with the 1 cup of water. Sauté veggies in the water until they soften – for about 10 minutes. Add the rest of the ingredients, and simmer until the carrots and potatoes are soft. Serve with a large salad, sautéed kale, and a quick bread.

*don’t skimp – be sure to use fresh ginger! The flavor is unbeatable!

Grant’s Day

Today was the anniversary of a very, very special day!

Eighteen years ago today our oldest son Grant was placed into our arms in the Chicago International Airport!

I was ‘chatting’ with an adoptive mama friend the other day, and she encouraged me to share Grant’s story. A great idea!

Adoption has always been a part of our hearts, because my husband Blake is adopted.

Blake and I had many conversations about adoption even when we were dating and engaged.

We had looked into domestic adoption after we were married and before Kayla, our oldest child and daughter, was born.

It was after our sixth miscarriage that we finally moved forward with the plan to adopt.

The Lord used a doctor that I saw during all of our infertility problems to open our eyes to international adoptions!

From the first paperwork to Grant’s arrival took sixteen months, a lot of prayers, a lot of waiting, and many tears!

Grant was six months old this first day that we held him.

I was fourteen weeks pregnant with Addie Mae when Grant arrived home!

Addie Mae was born a day before Grant turned one year old!

We had many sweet, dear friends and our families at the airport with us that day.

I can still remember the strong emotions of this day like it was yesterday.

We still stand in AWE of how the Lord put our family together!

Grant is from Seoul, South Korea.

With the Korean program, at that time, you did not travel to Korea.

The orphanage in Korea appointed an escort to bring the children to their forever families!

We had a man who was in the air force and coming state side on mid-tour bring Grant to us!

Such a joyous time in our lives!

The memories of that special day are tucked deep into our minds and our hearts.

On February 28th every year since then, we have celebrated the arrival of Grant into our family!

And so we did that today!

We always have a big Asian meal!

Blake prays over our son, and we give thanks for the God-fearing, amazing young man he has become!

We enjoyed sweet fellowship today. My all time favorite thing is sharing our big kitchen table, a big meal, chatter, smiles and laughter!

Eliza said “It’s a big circle day!!” She loves the table full as much as I do!

It is a bittersweet time of life!

When I look out the window and see these kiddos with each other – their best friends – I tend to get a lump in my throat!

But then I look at our son-in-law, and our grandbaby – and I know the best is yet to come!

The best is yet to come!!

Grant, we are so thankful that the Lord chose you to be our son. We are privileged to watch the Lord work in your life, to see your love for Him, and to see you live your life with your eyes on Him!
