And There Goes March

Here we are almost to the middle of April!

Time seems to be speeding up!

Is it just me?

Or do you agree?

March was a wonderful month for us here – mostly warm and beautiful after such a dangerously cold February.

I spent a lot of time in March doing some spring cleaning!

I did not take any photos of the piles, but every Friday as I headed to town I usually had about five grocery bags of stuff to drop off at Goodwill.

It is freeing to unload so much unneeded stuff!

A lot of it was still from the farm, and I figure if we had not touched it in three and a half years, it was time for it to go.

Sometimes I had helpers, and sometimes I just worked on a spot on my own.

This day Lane was helping me organize the pantry in the storage room.

Another thing I am constantly working on is feeding this crew of mine!

I enjoy looking back at our food photos – they spark meal ideas that I have forgotten about!

I think I should write a book on how to stack a grocery cart!

While shopping to get as much as you can in it at once!

It takes skill, I’m telling ya!

I have a very helpful trio when it comes to all things in the kitchen.

One day for lunch we made pizza – the dairy-free cheese options have come a long way!

That was Lane’s first piece of traditional pizza ever – at twelve years old.

He LOVED it!

We have been spending a lot of time with our bests – something I am so thankful for!

There are times when weather and illness keep us apart – I’m SO glad when they don’t!

This is how you know you have had the best Sunday with your bests!!

Even with the nice weather we still play games every afternoon at least once.

Racko is Eliza’s and my favorite!

And there is always books!!

Sometimes I cannot get them to put them down for anything!

One afternoon I re-read some of my most recent journals!

It was SUCH a great thing to do – to see my heart on paper through a few years, answered prayers, and all I have studied and learned.

If you do not journal, I highly recommend it!

Ruby is still our joy and I love taking photos of her, especially her funny positions.

Sadie is still our joy too – should I feel guilty I do not have any photos of her?

We are still raising a giant here, in case you thought he stopped growing and started shrinking.

My heel is lined up with the heel of Chad’s boot.

How funny is that???

He is topping out at almost 6 feet 4 inches these days!

We went to a hymn sing at our good friend’s house a couple of weeks ago.

We decided it was so lovely that we need to have one monthly!

So we are going to!

Any one else come home from a spring clothes shopping trip with much needed items and discover the security tag is still on something?

Just me, huh?

It was frustrating because we live so far from town!

That sweatshirt was for this little man.

He is growing!

At least his arms and legs are growing!

It is a daily blessing to be around such an inspiring nine year old!

We took a little road trip in March to visit Whitney, Hannah, and to meet their precious new baby, Titus!!

It was SO wonderful!

Titus is a doll and his dad and mom looked so happy!!

Blake and I are still dating!

Thirty-three years I’ve been dating my guy!!!

Next up I’ll show you what we did for our 32nd wedding anniversary!

It was FABULOUS!!

Stayed tuned to see a great ending to March and beginning to April!!

A Recipe//Nightshade Free Chicken Tacos

I have a great recipe for you!

We just tried this for the first time a couple of weeks ago.

I avoid nightshades – which are white potatoes, all peppers, eggplant, tomatoes and any spice derivatives of these things – to help keep inflammation at bay from my autoimmune issues.

Mexican food is harder to do without those nightshades!

This recipe is from my favorite cookbook – Nourishing Meals.

These tacos were a HUGE hit with everyone – so much so that they asked me not to make the regular version of this anymore, but to make this one from now on instead!

Nightshade Free Chicken Tacos

2 pounds boneless skinless chicken breasts
1 1/2 cups cherry or pomegrante juice
one onion cut into moons
3 cloves of garlic minced
1 TBSP olive oil
2 tsp cumin
2 tsp herbed seasoning
1 tsp pepper

Place all in slow cooker. Cook on low 7-8 hours. Shred the chicken and place back in the sauce. Serve in soft or hard shells, or on lettuce in a bowl.

Enjoy!!

My yummy plate, with lettuce, cabbage slaw, cucumber salsa, dairy-free sour cream, avocado and a lime wedge:

And here’s the plate of a certain young man – love that they eat so well!!

A Weekend Road Trip

In the middle of March we took a little road trip to attend a wedding!

What was SO fabulous about this trip, besides the beautiful wedding, was that we ALL were able to go!

The older boys, Addie, and even all of Kay’s crew!!

It was a beautiful weekend weather wise too, which always makes a road trip better.

We had two vehicles full of Moschels.

The drive was only four hours, but we stopped half-way to get some much needed coffee!

The wedding was BEAUTIFUL!!

I wish I would have taken photos!

The reception was full of friends, and we had such a great time visiting with everyone!

Our hotel rooms were three in a row – two full of Moschels, and one full of Kay’s crew!

It was SO fun having the grand babies next door!!

I wish I would have taken more photos of that too!

Sunday morning we all went to church with the groom’s family.

They had a guest speaker that day and it was AMAZING.

After church they had a lunch for all of the wedding guests to attend.

Pretty soon it was time to head back home!

We all stayed together on the way home and stopped and had dinner at Chipotle!

Of course we had to get it to go and eat in our van – but it was super fun that way!

We are enjoying road trips!

Something that was much harder to do when we were on the farm.

We have some plans for a few more weekends away this summer – Lord willing!

Time will tell!!

Do you all like to travel?

We Traveled to Kenya

In the midst of lots of traveling and the busyness of everyday things, we are still enjoying our school days!

In our last My Father’s World unit, we traveled to Kenya!

It was really fun and we learned so much.

Our morning rhythm still starts with singing, Bible memory, a devotional and prayer.

We then move into our core subjects, before doing our unit study and science.

I always order a lot of books from the library!

Another library in our area opened for browsing, and we were SO glad!

Our Kenya study brought with it lots of fun things!

I broke out the Mancala game – which originated in Africa – and we had about one week of a Mancala craze.

We also made a clay project which was very fun and got the kiddos to be quite creative!

We painted an African savannah too.

They LOVE to paint!

We always have illustrations and narrations, which is an all time favorite here.

They are getting to be so good at drawing!

I have read some great books out loud to the kiddos lately.

Adventures With Waffles had us constantly laughing, and the mama of this crew might have shed a tear while reading this one too!

Next we are headed to Saudi Arabia!

School with this trio is FUN!!

Blake and I recently planned their next school year, and that was fun too!

I cannot believe this trio of ours is finishing up third and seventh grade!

Looking forward to continuing to learn together!!

So thankful that the Lord has allowed all these years home schooling!!
