A Recipe//Grain-Free Meatloaf

In the busy of life and fullness of my brain, I have not been putting recipes on the blog as of late!

Today I would like to share not one, but TWO recipes – both for grain-free and egg-free meatloaf.

I am on a very strict diet for auto-immune disease, and I do not eat any grains or eggs.

I am here to tell you that you do not need grains or eggs in a meatloaf to make it stay together or be delicious!

I also would like to know what Mama doesn’t love to hide all kinds of veggies anywhere she can?

Both of these meatloaf recipes are a favorite around here.

They are both equally delicious!

The first recipe I adapted from here.

Shredded Veggie Turkey Meatloaf

4 pounds of ground turkey
4 smaller zucchini, washed and shredded in the food processor
4 large carrots, peeled and shredded in the food processor
8 TBSP parsley
2 tsp garlic granules
2 tsp sea salt
3 tsp Herbamare seasoning (or your favorite all purpose seasoning)

Mix all ingredients in a large bowl with your hands until thoroughly combined. Shape into several rectangular shaped meatloaves. I make five meatloaves. You can always adjust the recipe to smaller amounts if necessary. Place loaves in two 9×13 pans. Bake at 350 degrees for one hour to one hour and fifteen minutes until done.

I am not sure where I got this second recipe from, but I am guessing Pinterest.

Grain-free Meatloaf

2 small or one large onion
3 cloves of garlic
5 stalks of celery
2 TBSP oil

Place all veggies in food processor fitted with the “S” blade and pulse until chopped to the size of a small dice. Sauté these veggies in 2 TBSP of oil of your choice, until softened and fragrant. (We use organic unrefined coconut oil) Place veggies in a large bowl to cool.

1 large sweet potato
2 TBSP oil

Peel potato and cut into strips. Shred potato in the food processor fitted with the shredding blade. Add the 2 TBSP oil to the same pan and sauté potato over lower heat, stirring often so it does not stick, until the potato is softened. Add potato to the other veggies in the large bowl to cool.

Once veggies are cool, add to bowl:

4 pounds of ground turkey or beef (we use ground turkey, but I have made it with beef before too!)
1 tsp sea salt or Herbamare
1/2 tsp black pepper

Mix all ingredients in bowl with your hands until thoroughly combined. Shape into several rectangular shaped meatloaves. I make five meatloaves. You can always adjust the recipe to smaller amounts if necessary. Place loaves in two 9×13 baking pans. Bake at 350 for one hour or one hour and fifteen minutes until done.

***These meatloaves freeze VERY well after baked. Just slice the meatloaf and par freeze on a tray lined with bleach-free parchment paper. Once frozen, layer slices in a freezer container with parchment paper between each layer. I use this meatloaf for a quick, filling, nutritious breakfast. Just put a frozen slice of meatloaf into an oven safe dish, and warm it in a 350 degree oven for 10 to 15 minutes, turning the slice of meatloaf over half way through cooking. I use a toaster oven, so a big oven might take a little bit longer.

Gambler and Gridlock

The Lord still has us on the farm this spring and we do not know when or if He will see fit for the farm to sell.

Because of that, we offered up our pastures for some more foster horses for the summer.

We were pleased to learn that we would be adding two handsome geldings into our care!

They arrived yesterday.

Gambler is the paint, and Gridlock is black!

Aren’t they beautiful?!

We still have two mares, Dyna and Shaggy, with us as well.

They arrived in May of 2015.

There is always a little tension when new horses are added to already established horses as they work out who is going to be in charge.

We were so pleased at how well the transition for the horses went!

Here Dyna and Gambler are checking each other out, and then Gambler bucks a couple of times.

We feel so privileged to be trusted with such beautiful animals!

I love looking out the kitchen windows and seeing them all there.

We are so thankful to be enjoying this season on the farm – even though it is a season of waiting!

The South Side

On a windy October day eight and a half years ago, we saw what is now Adoni Acres Family Farm for the first time.

I remember a lot about that day – but mostly how I felt standing on the south side of the farm taking in the beauty all around me.

I wish I would have ran back up to the house to grab my big camera for these photos!

My cell phone just does not show the colors as sharp as they seem by the eye.

The south side of the farm has AMAZING views and has always been our favorite spot to be.

Years ago Kayla built eight garden boxes and filled them with herbs.

She put them on the south side, right next to our huge old willow tree that holds our wooden swing.

It has been SUCH a beautiful spot!

The herbs have been loved and used as well.

On Saturday my crew transplanted what herbs were already growing this spring, took down the rest of the herb garden, and seeded the area back to grass.

With a another grand baby on the way and trying to sell the farm, I know our limitations!

We just cannot take care of everything like we could when we had a full team here everyday.

Thankful for this hard working crew though!

They all worked together and got the job done!

We wrapped up our full-time school last week.

We still do some structured school over the summer – about two hours in the mornings.

That Laura Ingalls unit study I planned to do last summer never happened – but we started it a couple of weeks ago and I do plan to continue it this year!

We hope to get to Pepin for a field trip as well.

I will keep these kiddos’ minds moving in math, and the littles’s minds still in Phonics.

I have found I pay a high price when I stop school completely all summer long!

Now that school is scaled back though, one of my goals this week is to plan and plant the garden!

Do you think it will quit freezing at night now?

Good grief, it has been cold!

We also have plans to set up our pool – crazy as that sounds!

While the Lord has us here on the farm we want to still enjoy it while we can!!

I guess I should say happy summer, everyone!!

A Great Week!

A report of a great week must start with the WEATHER.

SO, so good!

Warm, sunny, blue and NOT windy!

We spent a lot of time outside in the afternoons after school!

We also had a great week of school!

Lots accomplished and kiddos with such happy hearts!

After I typed that I saw Tate’s face in this photo!

Addie goes to Clyde’s place every Wednesday afternoon to help Kayla.

This week was all about getting ready for Baby K to arrive!

We headed over in the late afternoon to help too!

Lots of food put into the freezers!

I had a tired crew after that big day!

I also worked on stocking our freezers this week.

How I LOVE being in the kitchen!

The weather has been warm for THREE days in a row!

Do you think spring is here to stay?

I know a certain someone who enjoyed mowing the farm!

I also know some kiddos who have enjoyed being outside non-stop!

Lane blessed us by making lemonade yesterday.

He loves to use the Citrus Star!

Remember our kitty Callie that I have mentioned before?

Well, ahem, we renamed her.

I mean him!

Yep. Funny story for sure!

I will not mention the certain someone that decided he was a girl when she, I mean he, first arrived at our farm!

So, now he is Toby!

Good grief.

Today was FRIDAY!!

Not only was it cleaning and grocery day, but we got this place shining bright because we showed the farm!

YAY!

My grocery crew is amazing.

We needed to STOCK UP.

What a big job!

My mini-me led the crew!

Love that girl!!

During the showing today I took the littles to Clyde’s place!

LOVED the dynamics of just Kay and I and the four little ones!

SO FUN!!

No date night tonight – but family taco night instead!

It smells good already!
