Happy First Birthday, River Salem!!

Our precious River Salem is ONE YEAR OLD!

David and Kayla had a fantastic birthday party for River Sunday evening.

MY HEART WAS SO, SO FULL!

A photo is worth a thousand words, so good thing I managed to get this post down to 36 photos!

River was born on his other Grandma’s birthday (David’s Mom!), which is SO special!!

I know what you are thinking!

How could I possibly leave any of those photos out, right?!

Exactly!

Thank you very much!

Sweet River Salem, you are our sunshine boy!!

You are a heart stealer!

And pure JOY!

Happy, happy first birthday, Rivy!!

We all love you SO MUCH!!!

The Yard Project

Blake has spent countless hours trying to coordinate phase one of our yard project!

He had to coordinate where to get fill, gravel, and good black soil, who would haul all the loads, renting the equipment that would be needed and having it delivered, the time off work, and good weather too.

It was not an easy job!

We had a plan for this past Friday, but we watched and watched the weather forecast all week long.

Finally on Wednesday evening Blake decided to put the plan into action!

The work started late on Thursday afternoon when equipment and our first load of black dirt was delivered.

Guess who we hired to be our dump truck driver?!

Yep!! It’s GRANT!

How fun it is that??!!

Thursday afternoon and evening our crew got to work!

Friday morning started EARLY.

It was going to be a crazy busy day!

Grant left before 7 a.m. to bring our first load!

These three guys got to work spreading all those loads where they were supposed to be!

Grant hauled one load on Thursday, 22 loads on Friday, and two on Saturday.

CRAZY, I know!!

It took more than we thought it would to fill our “parking area” and that front yard.

Blake had estimated 12-20 loads.

Needless to say, we are already WAY over budget!

It’s so easy with big projects for that to happen.

Regardless, Saturday morning they were back at it again!

It was cold, cloudy and windy on Saturday, which was a relief for our crew!

Just look at this parking area!!!

Isn’t it amazing?!!

Chad walked behind that compactor for hours upon hours.

Grant hauled the last two loads on Saturday, but they took one and 1/2 hours each because the fill was much farther away.

Blake worked on finishing the parking area up Saturday morning, and then worked on grading the huge drop off in our front yard.

I am so excited to do some finishing work out there by hand and then plant that grass seed and add some landscape plants!

It’s exciting to see our goals come to fruition!

It will be more exciting to walk bare foot in that beautiful new grass in the front yard some day – hopefully soon!

You are looking good, Twin Oaks!

And are such a blessing to us!

The Garage

One of the things I did miss at first when we moved to Adoni Acres back in 2009 was an attached garage.

You get used to what you have though, so I never really thought about it much!

When we purchased Twin Oaks, I was excited to have an attached garage again!

We have four vehicles here in the evenings, and a lot of stuff….so making our two car garage work for us took some creativity!

We basically had filled it with everything left from the move last August – and there it sat all winter!

I know!

CRAZY.

One warm, sunny Saturday we got started on this huge project!

As we worked, I started listing stuff on Instagram stories and Craig’s List – all for FREE because we just wanted it GONE!

We made piles on the drive-way of things we were giving away, things we were taking the to dump, and things to keep.

Pretty soon it looked like this!!

Then the guys starting building shelves!

We worked together another day organizing every thing that we were keeping and put it all on those shelves.

The garage project turned out great!

It’s a very usable space!

The first time I loaded everyone into the van in the pouring rain I was singing praises!!!

You are a sweet little place for us, Twin Oaks!

We are hoping to grow old with you!

A Recipe//Restaurant Style Salsa

This salsa recipe is originally from The Pioneer Woman, but I revised it a bit.

I use my food processor to make this salsa and it whips it up super fast.

Restaurant Style Salsa

one 28 ounce can organic crushed tomoatoes
one 28 ounce can organic diced tomatoes (we like to use the fire roasted ones)
one 4 ounce can of diced green chiles (we use mild)
one large onion, quartered
three – four cloves of garlic, peeled
one large bunch of cilantro, the bottom stems cut off and discarded
1 tsp sea salt
1 tsp cumin
2 TBSP lime juice (one fresh lime squeezed)

Place all but the crushed tomatoes in the food processor. Run on high until everything is chopped and thoroughly incorporated. Pour into a large bowl and add the can of crushed tomatoes. Stir well. Place in canning jars and store in the fridge. This lasts for several weeks in the fridge.

This recipe makes 3 1/2 quarts, unless your kiddos see you making it, of course!

** you can also add a jalapeno (seeded or not seeded) if you like spicier salsa, or 1-2 TBSP of honey if you like a sweetness to your salsa.

ENJOY!!
